Honey Glazed Carrots
My blog does not reflect the fact that I have a massive sweet tooth, but believe me when I say I do. I love my fair share of savory foods, but I'm always looking forward to dessert. This makes honey glazed carrots a perfect halfway point for me. You are welcome to eat this tasty veggie dish alone, as a side with other vegetables, or with your choice of poultry.
What You Need
Olive Oil
Salt + Pepper to taste
1/4 Tsp of Thyme
2 Tbsp Honey - there are plenty types of honey. If your budget allows it go for Manuka, and if not, do what I do and reach for something local.
2 Organic Carrots
Note: When I made this recipe, it was only for Nima and I, and we used it as a side. That is why we only used to carrots - one for each. Double the recipe as needed.
How To Make It
Pre-heat the oven to 350F
Wash and peel the carrots, then cut them in half length-wise
Place carrots on a baking sheet and drizzle the desired amount of olive oil on them
Sprinkle the salt, pepper, and thyme over the carrots
Then drizzle them with the honey - try and distribute it as evenly as possible
Place the baking sheet in the oven until carrots are soft - approximately 30 minutes
At this point, stop baking the carrots and broil them on high
Keep a close eye on the carrots and remove them from the oven once they begin to just barely blacken
